Hi Pat, did you thaw the cranberries? If so, that should not have been an issue. Were you able to put it back in the oven? It’s a pretty forgiving dough.

I used frozen cranberries and I think that was my issue. Next time I will use fresh berries.

It’s one of our favorite holiday breads as well! And not for nothing, it’s a great bread to use up leftover cranberries after the holidays!

I’m so happy you and hubby enjoyed the bread! I made several loaves over the holidays and they disappeared lightening quick in our home, too. Writing this made me realize I have all the fixings for a loaf or two in my freezer and on my counter right now, too! Hmmm….🤔

I love anything cranberry and was excited to try this recipe. So with leftover cranberries from Thanksgiving that needed to be used or frozen, and being snowed in for the first time in years–I put my husband to work chopping apples and cranberries. We loved it so much we didn’t stop until we had eaten over half the loaf. We used a Granny Smith apple and well over the amount of cranberries called for so I anticipated I might have to make a glaze for my hubby to enjoy it. But the ripe banana did a great job adding to the sweetness. It was absolutely delicious!

I’m so glad you shared how you altered the recipe! I will add your suggestions to the post for readers who also want to go gluten free. Is the gluten free baking mix a cup for cup substituion? And any idea how much of the cranberry sauce you used?

I know you wrote this two weeks ago, so you may not remember. I totally unplugged for the week of Christmas, so I’m just getting back to work.

Delicious! I used King Arthur gluten free baking mix and instead of cranberries, used the Thanksgiving leftover homemade cranberry sauce (which has nice chunks of cranberries in it) and reduced the sugar by 1/4 cup. Oh my word is it good! Thank you for this new holiday favorite!
