This is an absolutely delicious, flavourful soup! I appreciated the 10 minutes prep time. The smoked ham hock resulted in a rich taste, needing just a bit of black pepper to finish. This is a great addition to my collection of cold weather soups.

I added a bay leaf and thyme and at the end added the spinach (great addition), smoked ham and some salt/pepper. We served it with croutons, parmesan cheese and a splash of tabasco and it was delicious!
