Hi Carole,

The only thing I can think of is that the siberians may be ‘juicier’ than romas, which are known for their minimal pulp. How long did it ultimately take?

My tomatoes are still in the oven after over an hour…. After tasting one I think they are delicious but 45 minutes is not long enough. My tomatoes are Siberians, similar in size to roma’s, but juicier and more flavorful.

Great idea to add garlic to the tomatoes for roasting. Nestling them into the tomatoes ensures they don’t dry out while roasting. We’re loving the sweet taste of the tomatoes in all things pasta.

I made these in the oven and they worked perfectly. Tossed some with pasta for an easy dinner & frozen the rest for later.
