Hi AW,

You can macerate for as little as 30 minutes or up to a week.

The longer you macerate, the shorter the cook time. But you’d be fine with however long you would like to macerate!

This jam is delicious and a labor of love! I macerated the nectarines for two days and it was absolutely worth the time and wait. I may try and replicate it using coconut sugar, the color will likely be a bit darker from the coconut sugar but I think it would be equally good.
