HI Joanne,

So sorry for late response! Just finally coming up for air from being gone so long and getting to my emails. I don't see why you couldn't mix this by hand, though it is a thick batter.

Hi Ariadne,

Yes! Use chia or flax eggs to substitute for the eggs. Simply ue 1 TB of either flax or chia and 2 1/2 TB of water to substitute for each egg.

Enjoy

Well, I was glad to see this was gluten free! Then I saw it requires 3 eggs... I'm allergic to egg whites, so have had to try substitutions. And, after sending you my note about bean soups, I had to LOL! I've recently - and successfully - been using aquafava (bean juice from canned beans) to substitute for eggs in recipes. Everything except scrambled eggs, of course. :-) Notes I've seen for substituting aquafava say to limit replacing no more than 3 eggs in a recipe with it. Whew! So, I'm going to try this recipe today, having just run out of crackers today with company coming for the weekend. What a splurge, right?! (Wonder if it goes with candied jalapenos... LOL!)

Hi Jeanie,

Absolutely! Any dried fig will work. Use what you have.

Wishing for a speedy recovery for you so you can get back to the good things!

Hugs, Lynn

This bread looks wonderful! I’m experimenting with gluten free baking and it can be a challenge. I also try to be plant based so I’m wondering if this recipe could possibly be made with flax eggs. Otherwise it looks perfect!

Thank you, Lynn
