So the dough should rest before doing the stretch and folds, then after the stretch and folds you can put it in the fridge. If making the dough for dinner the next day I would just let it sit overnight at room temp, then do the stretch and folds in the morning, then let it sit in the fridge until you&#039;re using it for dinner.

Hi Megan, I wouldn’t freeze the dough. You can freeze a pizza crust once it’s cooked, then heat it up and add toppings later if you want. You can freeze sourdough bread dough, but pizza crusts would dry out/ change texture in the freezer from my experience.]]></description>
