Water, Stock or Broth

Red Wine Vinegar, Balsamic, or Lemon Juice

Heat the oil in a large sauce pot and saute the onions and garlic.

Dump in the chopped carrots, celery, and beets. Then add in the pumpkin puree and water or stock.

Make Your Sauce...

Simmer for 20-30 minutes, then use an immersion blender to puree the mixture. Then you can add in the vinegar and season to taste.
