Pastry Flour
Dark Brown Sugar
Ground Ginger
Allspice & Cinnamon
Butter & Egg Yolk
Butter & Cream
Baking Powder & Baking Soda
Add the dry ingredients to a mixing bowl of pastry flour and give it a good stir.
In another bowl, add cold cream and molasses, then the cold egg yolk.
Add frozen grated butter to the dry ingredients and toss to cover.
Mix the two bowl together until combined. Then get ready to roll out the dough.
Turn the dough out onto a floured surface, pat into a disk, cut into wedges, and brush with cream and sugar.
Bake for 12-15 minutes or until done. You'll know your scone is done when it sounds hollow when tapped on the top or when you can move it on the parchment without it sticking.
