Ingredients
  

  • 3 cups drained Castelvetrano olives
  • 1/4 cup very thinly sliced shallots
  • 3 cloves garlic thinly sliced
  • 1 TB + 1 tsp crushed pink peppercorn
  • 1/2 cup olive oil

Instructions
 

  • Combine all ingredients and let sit for 3 hours at room temperature before serving. Store leftovers in refrigerator.
