Sourdough Flatbread

Ingredients
  

  • 180 grams all purpose flour approximately 1 ½ cups
  • 150 grams full fat Greek yogurt approximately 1 cup + 2 tbsp
  • 120 grams active sourdough starter approximately 1 cup
  • 1 tsp salt
  • 1 tbsp olive oil
  • 1-3 tsp cooking oil avocado, canola, or corn

Instructions
 

  • In a large bowl, whisk together sourdough starter, olive oil, salt, and Greek yogurt until all ingredients are incorporated.
  • Add all-purpose flour a little at a time. Whisk until the flour is well distributed throughout the dough. If the flour will not incorporate fully and the dough is too dry, add 1–2 Tbsp of water to the dough and continue kneading (the dough should be shaggy but will form a ball if you press it together).
  • Knead the dough ball for around 5 minutes or until all of the flour left at the bottom of the bowl is incorporated and the dough ball becomes slightly elastic.  (I did this while the ball was still in the bowl to incorporate the flour, You can knead on a lightly floured surface as well.)
  • Cover the bowl with plastic wrap and let it sit at room temperature for 4–6 hours. Place the dough in the fridge for another 3–4 hours or overnight. (You can skip the refrigeration step if you’re short on time.)
  • Separate the dough into 6 equal dough balls (or 3 if you want larger flat breads).
  • Use a rolling pin to roll out the flatbreads between ¼” and ½” on a lightly oiled surface.
  • Heat a cast iron skillet or stainless steel pan over medium heat. Use about 1 tsp of cooking oil with a high smoke point (canola, avocado, or corn) to cook the flatbreads. Cook for 2-3 minutes on each side until browned. Add a little oil to the pan in between cooking each flatbread to prevent sticking.
  • Top with melted butter and serve with yogurt sauce, hummus, chopped parsley, or any of your favorite toppings!
