YAY! this is one of my favs and, in fact, I have balls of dough in my freezer right now! So glad hubby enjoys them.

Just finished baking a batch and they are delicious. Hubby likes them very crunchy so I flatten them with a fork before baking and they came out very crispy. Thanks for the recipe, it's a keeper. ♥

Lynn, My grandmother made these cookies, and the recipes are the same! Love them. She also made a soft cookie called Orange Drops that had sour cream and orange rind. There was a confectioner’s sugar icing with orange rind and juice. Delicious! My other grandmother with a German heritage made cookies called Sanad Tarts. There may be other names. She made them at Thanksgiving and put them in an air-tight tin marked, “Do not open till Christmas.” They were hard as a rock and then aged into a soft cookie with a distinctive taste. They had only 5 ingredients: flour brown sugar, butter, eggs and vanilla. Before baking they are brushed with beaten egg whites. She sprinkled them with sugar, cinnamon, or put on a couple slivered almonds. Happy holiday baking!!

Good morning Nan,

First of all, thanks so much for being a reader of Nourish and Nestle! I love what I do, but it would be nearly as much fun without readers like you on the other end of my ramblings.

As it relates to the cookies, these aren't crisp and snappy like I think of Ginger Snaps. I just don't want you to be disappointed. These have a slightly crisp exterior, but a most definitely soft and chewy interior. That said, I think some finely diced preserved ginger would be delicious! The cookies are pretty flat, so I would keep the ginger bits on the small side. And yes, we often freeze the cookies balls for fresh on demand molasses cookies throughout the season!

If you like a more gingery, lighter, and crisper molasses cookie, then check out these Crisp Molasses Ginger Cookies.

Happy Baking!

Hi Lynn,

I’ve been following you for a year now, and love everything you have offered! I love a good Ginger Snap cookie and will be making these today. Can you put some candied ginger nuggets in this, or would that change the consistency? Also, can the dough be frozen in the balls, and taken out as needed? That way I don’t over indulge! 😂
