Ingredients
  

Bread Ingredients:

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 egg
  • 1 cup packed light brown sugar
  • 1 cup buttermilk
  • 1/3 cup vegetable or canola oil
  • 1 teaspoon vanilla

Swirl Ingredients:

  • 1 apple cut into 1/3" pieces
  • 1/2 cup light brown sugar
  • 1 tablespoon cinnamon

Instructions
 

For the Bread:

  • Preheat the oven to 350°F
  • Generously spray a 9 X 5 loaf pan with cooking spray. Cut a piece of parchment paper the width of the pan (9" wide) that will extend beyond the top of the pan. Place the paper in the pan and spray the paper with cooking spray. My favorite cooking spray is Bak-Klene ZT
  • Whisk flour, baking soda, cinnamon, and salt tother and set aside.
  • In a larger bowl, combine egg, brown sugar, buttermilk, oil, and vanilla.
  • Add dry ingredients to wet ingredients and stir well until smooth.
  • Mix together swirl ingredients
  • Pour 2/3 of batter into prepared loaf pan. Distribute 1/2 of apple swirl mixture evenly over the batter, followed by the remaining batter and remaining swirl mixture.
  • Using a butter knife or skewer, gently swirl the batter and apple swirl mixture together.
  • Bake for 60 minutes or until a cake tester comes out clean.

Notes

For mini-loaves, reduce the oven temperature to 325° and check your loaves after 25 minutes. They should take between 25-35 minutes.
