Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 heaping 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoons ground nutmeg freshly ground if possible!
  • 1/4 teaspoons ground cloves
  • 1/4 teaspoons ground ginger
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1/2 cup granulated sugar
  • 1/2 cup dark brown sugar
  • 1 cup unsweetened applesauce
  • 1 cup diced apples 2 apples, peeled and seed
  • 2 Tablespoons milk nut milk, buttermilk, or apple juice
  • 1 Tablespoon vanilla
  • 1/2 cup chopped nuts optional

Instructions

  • Preheat oven to 350°F for a 9" by 5" loaf or 325°F for mini-loaves
  • Grease loaf pans. (I really like Bak-Klene which you can purchase at Williams-Sonoma.)
  • Whisk the flour, baking soda, salt, cinnamon, nutmeg, cloves, and ginger in a large bowl.
  • In a smaller bowl or large measuring cup, combine oil, eggs, both sugars, applesauce, vanilla, and milk or milk substitute.
  • Pour wet ingredients over the dry ingredients, along with the diced apples. Gently mix together
  • Pour the batter into your prepared pan(s). Bake 9" by 5" loaf pan for 55-60 minutes (or mini-loaf pans for 35-40 minutes) or until a cake tester comes out clean.
  • Cool completely on a wire rack before removing from pans.
  • Will keep in the fridge for 7-10 days, assuming it doesn't get gobbled up beforehand!
