Mini White Chocolate Mint Mousse
Are you looking for an Easy Holiday Entertaining Recipe? Well, I have a perfect one for you. Not only is this recipe just really easy, but the White Chocolate Mint Mousse can be made a day ahead of time and easily assembled before serving. Truly…holiday entertaining recipes don’t get much easier than this and you could add just a touch of green food color for St. Patrick’s Day celebrations! And the mini mousse means that you can satisfy your sweet tooth without feeling guilty!
Without a doubt, I have a sweet tooth.
And, I have very little discipline when it comes to said sweet tooth. As soon as dinner is finished, I REALLY want a sweet something-something to finish my meal.
Did you know that there is a real, physiological reason that we crave something sweet after a meal? The thought is that your body uses energy to digest that meal you just ate and sugar provides a wee boost of energy. So there…
That being said, just a small dessert is clearly better for us than some wonking big dessert.
Enter the Mini White Chocolate Mint Mousse.
It’s minty, fresh and…not to be understated…a mini mousse version. It’s the type of dessert I will enjoy, will satisfy my sweet tooth and I will not feel guilty about it!
And, most importantly, at just 3 ounces, these Mini White Chocolate Mint Mousse cups are huge on flavor! Walkers Shortbread Mint Royals are perfect for the base of the dessert, with their delightful combination of Walkers traditional pure butter shortbread (made with just four simple, natural ingredients: flour, butter, sugar, and salt), fragrant mint and irresistible dark chocolate. A light and airy Minty White Chocolate Mousse top the mini desserts and pairs perfectly with the dark mint chocolate shortbread.
You can alter these mini mousse desserts easily by adding a little green food color to the mousse or using Creme de Menthe instead of the mint extract. A touch of green would make these Mini White Chocolate Mousse cups all the more festive.
Mini White Chocolate Mint Mousse
Equipment
Ingredients
- 1 cup whipping cream chilled
- 8 ounces cream cheese
- 3/4 cup white chocolate chips
- 2 ounces powdered sugar
- 3/4 tsp mint extract
- 1 pkg Walkers Shortbread Mint Royals
Instructions
- Soften cream cheese. Microwave at 50% for 1 minute
- Add white chocolate chips to softened cream cheese and microwave at 50% power for 30-second increments until chocolate is melted. It will take 3-4 times to melt the chocolate.
- Add powdered sugar and mint extract to cream cheese mixture and combine thoroughly. Set mixture aside.
- Put whipping cream in stand mixer and whip on high for about 4 minutes.
- Gently fold whipped cream with cream cheese mixture
- Refrigerate for at least 2 hours. It can be made one day ahead.
- Place one Walkers Shortbread Mint Royals Cookie in the bottom of each dessert cup
- Pipe mousse over Walkers Shortbread Mint Royals Cookie
- Garnish with mint leaves or chocolate straws

In terms of the mini dessert cups, I use my Weck Jars…because I have them. I use them for condiments, spices, and my wee desserts. Because of their lids, they are very functional. AND, not for nothing, it was clearly kismet that the Walkers Shortbread Mint Royals cookies fit in the Weck Jars perfectly.
But, there are other options available as well; here and here. If you do want to look for other dessert cups, bear in mind that the Mint Royals are 1 3/4 inches in diameter

This sounds delightful! You may wish to check the written recipe for the timing of chocolate melting – several 30 MINUTE runs in the microwave will burn it badly. How about 30 SECOND runs as noted in the video? Now for some dessert making! Thank you!
