Summer White Wine Sangria

Happy Friday!  Woot…we made to another weekend! I have a delicious little beverage to help you get into the weekend mode. This White Wine Sangria with cucumber, apples and limes and topped with a splash of seltzer is so very light and refreshing…just the perfect drink for hot and steamy summer evenings. 

This white wine sangria came about partly as a result of my burgeoning bumper crop of cucumbers. The last two years our cucumber crop has been, well…just plain awful…for a variety of reasons.

But this year..let me tell you my friends…here we are just barely in June and I’ve already put up one jar of pickles (and will be putting up several more next week) and I’m actively looking for other ways to use these crisp and crunchy summer vegetables. 

Oh yum..this White Wine Sangria recipe is perfect for a hot summer evening. The cucumber, apple and lime just really 'dress up' a glass of wine. And topped with a splash of seltzer, it's the perfect and refreshing drink for entertaining or just relaxing.

Cucumber-infused water is so refreshing (more to come on that later) and I thought that their crispness and coolness might also add a little something to a dry glass of wine.

Sticking with the whole ‘green’ thing, I also added slices of granny smith apple and a couple of slices of lime. I know my cucumbers are organic and pesticide-free and I also purchased an organic apple and lime. In general, I do opt for organic fruits and veggies, especially when the skin stays on.

The alchemy of the fruit, cucumber, wine, and seltzer is the perfect, refreshing summer drink. None of the fruit flavors are overwhelming…you just get a hint of cucumber, a little tartness from the lime and a pinch of sweetness from the apple.

White Wine Sangria

Yield: 4 glassses
Prep Time: 10 minutes
Refrigerator/Inactive Time: 1 day
Total Time: 1 day 10 minutes

A refreshing White Wine Sangria made with cucumber, granny smith apple and limes

Ingredients

  • 1 bottle Sauvignon Blanc or other dry white wine
  • 1 large cucumber, sliced thinly, organic
  • 1 granny smith apple, sliced thinly, organic
  • Juice from 1/2 lime
  • 1 bottle seltzer water

Instructions

  1. Combine wine, cucumber, apple and lime in a container and refrigerate for 24 hours.
  2. To serve, pour wine into a glass and top with a splash of seltzer water. I used a 2:1 wine:seltzer ratio

So, how do you unwind from the workweek and transition into the weekend? For the past 1,600 (give or take) Fridays, Terry and I have welcomed the weekend with a movie and nachos. In general, Terry isn’t a ‘kitchen’ guy, but come Friday he shoos me out of the kitchen and prepares the platter of nachos. It’s the same recipe each week…though over the years we have lightened it up with turkey instead of beef, as well as reduced-fat cheese and refried beans.

    1. “zone envy”…I love it! But come mid-July, you’ll be sitting pretty and I’ll be a mosquito-riddled, humid and melted mop…now that’s a pretty image, isn’t it?
