It is not my intention to throw my husband under the bus, but…I had to make these toasted walnuts 4 different times in order to get them photographed before he ate them! I would toast them, leave them on the counter to cool and come back to find half of them gone! So a couple of days later I made another batch, left them on the counter to cool and…you get the idea. Finally, I rather snapped at him to leave the d@#! nuts alone long enough for me to photograph them!

Suffice it to say, as soon as the walnuts were done with their photo session, he went right back to his nut grazing.
And don’t you love it when some so simple is so good? I mean, we are talking toasting walnuts with olive oil, salt, and minced rosemary. That’s it. But that simple combination is an example of that adage, ‘the whole is greater than the sum of its parts.’
The toasted walnuts are obviously great just in a bowl on their own, but also shine as a part of a Charcuterie Board.
Toasted Walnuts with Rosemary
Ingredients
- 4 cups walnut halves
- 2 tablespoons olive oil
- 1 1/2 - 2 tablespoons finely chopped fresh rosemary
- 1 1/2 teaspoons salt
Instructions
- Preheat oven to 350°F
- Spread walnuts out on a large baking sheet
- Bake for 10 minutes
- Toss warm walnuts with oil, salt, and rosemary
- Let cool and enjoy!
- Store in an airtight container

I’m sure this is a silly question, but I not sure whether to start with roasted or raw nuts. I will buy the nuts at Trader Joe’s. Also, have you tried this recipe with cashews.
